French Bread Bruchetta

This classic appetizer gets a fun and easier to eat make over by using S.Rosen's French Rolls and melting shaved Parmesan over it.

  • 6 or 7 roma tomatoes (about 1 1/2 lbs)
  • 3 cloves garlic, minced
  • 1 Tbsp extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 6-8 fresh basil leaves, chopped.
  • Salt and freshly ground black pepper to taste
  • 3 S.Rosen's French Rolls
  • 3 TBSP cup olive oil
  • 4-6 Oz. Parmesan Shavings


  1. Preheat broiler to high. Place French Roll halves on a pan. Lightly toast halves under the broiler. Brush halves with olive oil.
  2. Chop  tomatoes and place in a small bowl.
  3. Thinly slice basil into thin strips and loosely combine with tomatoes.
  4. Add a tablespoon of oil and balsamic vinegar and gently toss tomatoes and basil to coat. Add salt and pepper to taste.
  5. Spoon mixture onto French bread halves, and top with Parmesan Shavings over it.
  6. Return to broiler briefly allowing cheese to melt.
