Directions
1. Heat a nonstick skillet to medium high heat, melt the butter and once fully melted add the diced ham.
2. While the ham cooks, combine the mayo and pesto. Spread on the top of the brioche bun.
3. Once the ham gets browned around the edges, mix in the beaten eggs and mozzarella cheese - stir until the eggs have set. This will happen quickly. Turn off the heat as soon as they start to set.
4. Spoon the egg and ham mixture on the bottom part of the bun then top with arugula and top bun with pesto mayo.
