Grilled Pineapple Colada Dessert Dogs

Grilled pineapple is one of summer's underappreciated food superheroes, or at least that's how we feel. That's why we created this easy to eat, super fun dessert.

Ingredients

4-6 large chunks of fresh pineapple per bun (put on a grill safe skewer)

Sweetened coconut Shreds

4 Tbsp. butter (room temp)

1 Tbsp. sugar

½ tsp vanilla extract

Whipped cream

Maraschino cherries

Directions

  1. Can be made before: A few hours or the day before prep the vanilla sugar butter: mix softened butter with the vanilla and sugar until well combined. Set aside.
  2. Gently spread the vanilla sugar butter on the insides of a plain hot dog bun.
  3. Skewer the pineapple chunks on a grill safe skewer
  4. Start grilling the pineapple over medium heat. Turn regularly until nice browing appears on all sides. Will take 6-12 minutes depending on your grill.
  5. During the last minute of the pineapple grilling place the closed bun on the grill for 30 seconds then flip for 30 more seconds.
  6. To assemble: remove the pineapple from the skewers and place into the vanilla sugar bun. Top with shredded coconut, whipped cream and maraschino cherries. Enjoy!
