Harissa Chicken and Apricot Salad Bites

For the Harissa Apricot Chicken Salad

  • 4 oz. Precooked chicken, diced
  • 1 Tbsp. Harissa sauce (add more if you like spice)
  • 1 - 5 oz. Container full fat Greek yogurt
  • 1 oz. Finely diced celery
  • 1 oz. Finely diced red onion
  • ½ tsp. Salt
  • 4 Dried apricots, diced
  • 1 oz. Toasted walnut pieces, chopped roughly
  • For the Sandwiches

  • 12 Slices of S.Rosen’s Party Entertainers Caraway Cocktail Rye
  • Micro greens for garnish (optional, and parsley also works well)



  1. To prepare the chicken salad, combine the yogurt, harissa, apricot and salt first, stir well to combine. Then add the celery, onion, walnuts and chicken.  Mix well. Can be made up to two days before.
  2. Top pumpernickel cocktail ryes with a hearty spoonful of the chicken salad, and add microgreens or toasted walnuts on top.
