Ingredients Batch, about 16 pieces
5 oz. Bacon, diced (5 strips)
2 Cloves garlic, mined
½ Cup diced fresh tomatoes, with an extra 1/3 cup for topping.
2 Tbsp Mayo
3 Tbsp Whipped cream cheese
Fresh arugula (sub lettuce if arugula isn’t your jam)
16 Slices S.Rosen’s Tuscan cocktail bread
Directions
1. Cook the bacon pieces in a pan until just about done (about 1 minute left), then add the minced garlic into the pan. When the garlic begins to brown removed the bacon from pan using a slotted spoon onto a plate with a paper towel.
2. While the bacon cools, combine the mayo and cream cheese together, then add the diced tomato. Add the bacon once it is room temperature. Put the mixture in the fridge for at least an hour.
3. To serve, put a generous spoonful of the bacon mixture on each slice of Tuscan cocktail bread, and top with arugula and more diced tomato.
