Lasagna Bites on Tuscan Cocktail Bread

Lasagna is amazing but it really does take forever to prepare, and frankly it will never be compare to Grandma’s. Sidestep the work and slight disappointment with these lasagna bites.

Note: With our recipes we did a spinach and mushroom sauce, but you can sub in 4 oz. of meat (ground beef, pork or Italian sausage) instead or just keep the sauce plain. Just to be sure to still cook the sauce for 15 minutes to thicken it.

Ingredients

Ingredients Per Batch, about 32 pieces:

1 Jar marinara sauce of your choice

1 4 oz. Package bella or white mushrooms, diced

1 Cup chopped baby spinach

2 Cup Whole fat ricotta cheese

1 Cup Grated Parmesan cheese  

1 Package shredded mozzarella cheese.

Directions

  1. Sautee the mushrooms (or meat), when done add the marinana sauce and simmer for 15 minutes to thicken. Removed the sauce from heat and allow to cool.
  2. Combine the ricotta cheese and parmesan.
  3. To assemble the appetizers spread the ricotta mixture on the base, add two spoonful of the marinara mixture and top with a hearty pinch of spread mozzarella.

Bake in oven at 375°F for 8 minutes. Optional: top with fresh basil. Serve and enjoy
