One Pan Mini Reuben Sandwiches

This one pan dish is fully suited up, with layers of classic Rueben ingredients, making for a tiny yet filling bite. Prepared and served on one pan for easy cleanup and travel.

Ingredients

1 package of S. Rosen's Cocktail Rye Breads (2 different packages for color assortment)

Thousand Island Dressing

1 lb. Corned beef

1 jar Sauerkraut

15 slices of Swiss cheese (half slice for each sandwich)

1 Tbsp. Melted butter

12.25-in by 8.25-in tray (use aluminum tray if going to a gathering)

Directions

1. Preheat oven to 350 degrees. 

2. Arrange a layer of Cocktail Rye on the tray. 

3. Smear Thousand Island on each slice and layer on corned beef, sauerkraut, and cheese. 

4. Top sandwiches with another slice of Cocktail Rye and brush on melted butter.

5. Bake at 350 degrees for 10 minutes. Serve hot and enjoy!
