Ingredients
2 Slices of S. Rosen's Hawaiian Bread
1/2 Cup Mayo
4 oz. Pimentos (diced)
Hot sauce (to taste, can be substituted for cayenne pepper)
8 oz. Shredded cheddar cheese
1 Tbsp Butter
Directions
1. Shred 8 ounces of cheddar cheese and drain 4 oz. of pimentos.
2. In a medium mixing bowl, combine mayo, diced pimentos, hot sauce, and cheddar cheese. Fold until spreadable.
3. Spread 3 tbsp of pimento cheese on a slice of bread and top with another slice of bread. (Note: do not use too much cheese, as it will melt and spread during cooking).
4. Melt butter in a frying pan on the stove. Grill sandwich on stove until golden brown.
