Poblano Pepper and Egg

A spin on a classic pepper and egg sandwich, best enjoyed on meatless Fridays!

Ingredients

1 S. Rosen's French Roll, lightly toasted

1 Poblano pepper, sliced

2 Eggs, beaten

2 Slices pepper jack cheese

2 Tbsp. Butter

Directions

1. Heat a nonstick skillet to medium high heat, melt the butter. Once fully melted, add the poblano peppers and cook until browning starts to show on the edges. 

2. While the peppers cook, toast the French roll. After toasted, place pepper jack cheese slices in the roll. 

3. Once the peppers are cooked, add the beaten eggs to the pan. Stir and turn off heat. Stir until the eggs are solid and combined with peppers. 

4. Spoon the cooked pepper and eggs into the roll and enjoy!
