Roasted Grapes and Brie Sandwich

Roasted grapes are a sandwich secret weapon. They’re sweet, but not overly so, and pair with all your favorite cheeses. For this recipe we toasted the bread to get a bit of crunch, which when combined with the gooiness and saltiness of the brie and the caramelized goodness of roasted grapes, made for one delicious sandwich.  And while we love brie in this recipe, feel free to sub in your favorite cheese if brie isn’t your thing.

Ingredients

For the Roasted Grapes

  • 12 oz. Red seedless grapes
  • 1 Tbsp. olive oil
  • ¼ tsp salt

For the Sandwich

  • Brie cheese slices, about a quarter inch thick
  • Handful of arugula

2 Toasted slices of S.Rosen's 100% Whole Wheat, Mulit-grain or Farmers Market Soft 12 Grain Bread  

Directions

1. Preheat the oven to 425F

2. Toss the grapes in olive oil and salt. Spread on a small sheet pan and roast for 25-30 minutes. When done roasting (they should be burst and showing the beginning signs of caramelization). Set aside and allow to cool. Can be made a day ahead of time.

3. Assemble the sandwich, starting with the brie slices, then top with the grape mixture and a handful of fresh arugula. Enjoy!
