Smashed Jalapeno Popper Grilled Cheese

A spicy and melty take on a grilled cheese, served uniquely on a smashed Brioche bun!

1 Sandwich

Ingredients

1 S. Rosen's Brioche Bun

2 Jalapenos, sliced

2 Tbsp. cream cheese

2 Slices of cheddar cheese

Onion crisps

2 Tbsp. butter

Directions

1. Heat a nonstick skillet to medium high heat. Melt the butter and once fully melted, add the jalapeno peppers and cook until edges start to brown. 

2. Remove jalapenos from the pan and immediately fold into cream cheese. Fully combine. 

3. Assemble the sandwich: place the jalapeno mixture on the base of the bun. Top with cheddar cheese and crispy onion. Add top of bun. 

4. Over medium heat, melt the rest of the butter in the nonstick pan. With top of bun facing down, use a spatula to press the sandwich into the pan. Cook this way for 2-3 minutes. Flip the sandwich and cook on the other side for 2-3 minutes. Note: keep an eye on the crispiness of the bread, as Brioche is a sweeter bread. 

5. Serve and enjoy!
