Smoked Salmon and Avocado Apps with Cucumber Caper Salad

Smoked salmon and cocktail rye and a perfect match. With this version we brought in avocado for a light yet decadent appetizer.

For the Cucumber Caper salad  

  • 4 oz. Thinly sliced cucumber half moons  
  • 4 tsp Chopped capers plus 2 tsp of brine
  • 2 tsp Apple cider vinegar
  • 2 Tbsp. fresh dill

For the Sandwiches

  • 12 Slices of S.Rosen’s Party Entertainers Pumpernickel Cocktail Rye
  • 4 oz. Smoked salmon
  • 1 Avocado, mashed, with a dash of lemon added to prevent browning



  1. To prepare the salad, combine the cucumber, capers, fresh dill and apple cider. Stir to combine well. Ideally, let sit a half hour before assembly.  
  2. To assembled spread mashed avocado on the toasts and add roughly a 2 inch by 1 inch piece of salmon. Top with a spoonful of the cucumber caper mixture.
