Ingredients
Ingredients for 3 sandwiches:
S. Rosen’s Brioche buns
1 Pineapple chunk skewer
1 Diced fresh jalapeno
½ Spicy Barbeque sauce of your choice more for grilling
6 Boneless, skinless Chicken thighs
Directions
1. Toss the chicken thighs with 1/2 cup of spicy barbecue sauce.
2. Heat the grill to medium heat and start grilling the pineapple skewer. Turn regularly to get char on all sides. Grill for about 15-20 minutes or until you're happy with the amount of char. Remove and allow to cool.
3. Add the chicken to the grill. Turning regularly and brushing with barbecue sauce until chicken is fully cooked. Remove from grill.
4. While the chicken cooks or while it cools, chop up the grilled pineapple and combine with diced jalapeno.
5. To assemble sandwich, place a chicken thigh (or two depending on size) on the bun, followed by a spoonful of the pineapple jalapeno mixture. Spread extra barbecue sauce on top bun if preferred. Serve immediately and enjoy!
