Ingredients
8 Slices S. Rosen's Hawaiian Bread
4 Eggs
1.5 cups Milk
1 tsp Vanilla Extract
2/3 cup Shredded Carrots
1/4 cup Brown Sugar
1/4 cup Sugar
1/2 cup Pecan Pieces
Cream Cheese Frosting Recipe:
1/2 stick Salted Butter
4 oz. Cream Cheese
2 cups Powdered Sugar
1/2 tsp Vanilla Extract
Directions
1. Preheat oven to 375 degrees. Cut slices of Hawaiian bread into cubes and spread evenly on cookie sheet. Bake until golden brown and let cool.
2. Place toasted bread in a large bowl and add beaten eggs, milk, vanilla extract, shredded carrots, brown sugar, sugar, and half of the pecan pieces.
3. Mix all ingredients together and transfer mixture to a greased baking dish.
4. Cover the dish with foil and bake at 375 for 30 minutes, then remove foil and bake an additional 10 minutes.
5. While the carrot bake is in the oven, combine all cream cheese frosting ingredients in a mixing bowl and mix with handheld mixer until ingredients are fully combined and texture smooth.
6. After removing the carrot bake from the oven, carefully top with frosting, making it easier to spread and melt while bake is still warm. Top with the rest of the pecans and serve while warm!
