Vegetarian Potato Reuben Sandwich

Is this vegetarian take on a Reuben healthy? No, not at all, but it is the delicious comfort food you crave on St. Patrick’s day. We embraced the potato as the corned beef replacement in this recipe and we have no regrets.

Ingredients

2 Slices of S. Rosen's Rye Bread

2 Tbsp. Thousand Island dressing

2 Slices of Swiss cheese

2-4 oz. Sauerkraut, drained

2 Hash brown patties fully cooked.

Directions

Full cook the hash brown patties according to cooking directions.

Place the cooked hash browns on the bottom slice of the rye bread and cover with Swiss cheese. Place this and the top piece of rye bread in a toaster oven (or regular oven) for 5-7 minutes at 400F. Or until the cheese is melty.

Spread about 1 Tbsp. of thousand Island dressing over the top slice of rye bread. Spoon your desired amount of sauerkraut a top the Swiss cheese.  Top with the thousand island coated bread slice. Enjoy!
